The story
Tortellini bake is a classic Italian dish that dates back centuries. It originated in the Italian city of Bologna in the 15th century, and since then it has become a beloved staple in many Italian households.
Ingredients
500 gms of ground beef
2 cloves garlic, minced
1 onion, chopped
8 ounces fresh mushrooms, sliced
2 tablespoons olive oil
Salt and pepper, to taste
1 jar of high quality tomato sauce
1 cup ricotta cheese
1 1/2 cups mozzarella cheese, shredded
1/2 cup Parmesan cheese, shredded
1/2 teaspoon dried oregano
500 gms fresh cheese tortellini
Instructions
Preheat oven to 190 degrees C.
In a large pan, over medium-high heat, heat olive oil. Add the ground beef, garlic, onion, mushrooms, and a pinch of salt and pepper. Cook until the beef is browned, about 10 minutes.
Add the tomato sauce and bring to a simmer.
Meanwhile, cook the tortellini according to package directions. Drain and set aside.
In a large bowl, combine the ricotta, 1 cup of mozzarella, parmesan, and oregano. Mix until combined.
Add the cooked beef mixture to the bowl and stir to combine.
In a baking dish, layer the beef mixture, tortellini, and remaining mozzarella cheese.
Bake for 25 minutes, or until the cheese is melted and bubbly.
Garnish with chopped fresh parsley before serving.
